FERMENTATION 101

Love sauerkraut or kimchi? Ever wondered how to make your own? Join us for an introduction to food fermentation, where you’ll learn the basic principles behind this ancient preservation technique and create a small jar of your own ferment to take home and enjoy later.

Explore the history of fermentation as a method of food preservation, discuss the science behind how and why it works, and sample a variety of styles of fermented foods. Perfect for beginners, this hands-on class will give you the knowledge and confidence to start fermenting at home.

About the instructor

Rebeca Siplak has worked in the horticulture/agriculture/permaculture fields for over 30 years, leaving gardens in her wake all over the country. She earned her BS in Sustainable Horticulture and has worked intensively in Pennsylvania, Missouri, Oregon, Florida and Virginia.
Being a gardener has led Rebeca to the adage, ‘Live to eat, not eat to live’. Growing her own food as much as possible has allowed her to hone her skills as a kitchen gardener. Rebeca enjoys eating the bounty and preserving the leftovers. Also living with a Celiac sensitivity has led her to change her diet to include more fermented foods like kimchi, kraut, yogurt, kefir and kombucha.
